Mix the Dough & First Rise

  • Combine yeast and warm water in your mixer bowl.
  • Leave for 5 minutes to activate.
  • Add flour and salt.
  • Mix with a dough hook on low speed until combined, then medium speed for 6-8 minutes until smooth.
  • Drizzle in olive oil and mix another minute to incorporate.
  • Cover the bowl and let rise for 1-2 hours until doubled in size.

Shape the Dough

  • Lightly flour a surface.
  • Tip dough onto surface.
  • Divide into 2 equal balls.
  • Tuck edges underneath to form smooth balls.
  • Cover loosely with a damp cloth.
  • Let rest 20 minutes to relax gluten.

Bake

  • Preheat oven to 250-275°C (or highest setting).
  • Shape each ball into a round base by gently stretching.
  • Top with sauce, cheese, and toppings.
  • Bake on a hot stone or tray for 8-12 minutes until crust is golden.
