Mix the Dough

  • Combine yeast, honey, extra virgin olive oil, and warm water in a jug.
  • Whisk together in a bowl: flour, cornstarch, milk powder, xanthan gum, and salt.
  • Add the eggs and the water/yeast mixture to the bowl.
  • Combine with a paddle attachment on low.
  • Beat on medium/high for 5 minutes (soft, thick, and sticky).
  • Divide the dough between two bowls lined with parchment paper, dust with flour.
  • Leave to prove for 2.5 hours (dough rises to about 1.5x).

Cooking

  • Preheat a Dutch oven for 30 minutes at 220°C.
  • Gently score the loaf.
  • Transfer (on parchment paper) into the Dutch oven.
  • Cook with lid on for 25 minutes.
  • Cook with lid off for 25 minutes.

Cooling

  • Place on wire rack.
  • Allow to cool completely before eating.
